POSITION SUMMARY
Thirty Nine Enterprises, LLC is a subsidiary of First Americans Museum with the goal of driving First American Museum’s mission within food and beverage services. Thirty Nine Enterprises, LLC is hiring a highly organized and detail-oriented Kitchen Expediter to ensure seamless communication and coordination between the kitchen and front-of-house teams. The Kitchen Expediter will oversee the flow of orders, ensure dishes are prepared to the highest quality standards, and maintain efficient service during busy shifts. This role is crucial to delivering an exceptional dining experience to our guests.
DUTIES AND RESPONSIBILITIES
- Review and organize incoming orders from servers or POS system.
- Prioritize and sequence orders to ensure timely preparation and delivery.
- Inspect dishes for accuracy, presentation, and quality before they leave the kitchen.
- Communicate with the Chef and line cooks to correct any discrepancies or issues.
- Act as the liaison between the front and back of house to ensure smooth operations.
- Relay special requests, allergies, or modifications to the kitchen team.
- Keep servers informed about ticket status and estimated preparation times.
- Coordinate the release of dishes so entire tables are served simultaneously.
- Ensure garnish, sauces, and plating materials are stocked and ready for use.
- Coordinate with dishwashers to ensure plates are always polished and stocked.
- Resolve issues quickly and professionally.
- Collaborate with kitchen and wait staff to address challenges proactively.
- Prepare and cook food items according to standardized recipes and guidelines.
- Ensure food is cooked and presented with consistency and high quality.
- Assist with food prep for the day and during service hours.
- Ensure proper storage and labeling of food items.
- Answer, report and follow executive and sous chef’s instructions.
- Collaborate with the culinary team to ensure smooth kitchen operations.
- Maintain a clean and organized workspace, adhering to food safety and sanitation standards.
- Stock inventory appropriately, assist in inventory management and notify supervisors of stock shortages.
- Follow portion control and waste reduction practices.
- Follow proper knife handling and safety procedures.
- Assist in catering services for internal Thirty Nine Enterprises, LLC events.
- Maintain Health Permits and Health Department reporting requirements.
- Assist with Thirty Nine Enterprises, LLC special events, activities, and festivals.
- Assist in 39 café prep and operation.
- Assist in setup, breakdown, and transportation of catering equipment and supplies.
- Other duties as assigned.
QUALIFICATIONS
To be successful in this position, an individual must be able to perform each essential duty satisfactorily. The requirements listed below are representative of the knowledge, skill, and/or ability required.
- High school diploma or GED equivalent
- 3-5 years of experience as a line cook
- 6-8 years of overall experience in restaurants or back of house
- Knowledge of food preparation, cooking techniques, and presentation
- Holds a ServSafe Certificate
- Proven record of safe food and beverage handling skills
- Strong organizational skills with the ability to adapt and re-organize effectively
- Culinary training or degree is a plus
- Ability to work in a fast-paced environment and handle multiple tasks simultaneously
- Positive Team Attitude
- Ability to work with minimal supervision
- Strong culinary skills with a passion for high-quality food
- Knowledge of food safety and sanitation standards
- Ability to work in high-pressure environments and meet deadlines
- Strong attention to detail and ability to follow recipes accurately
- Excellent communication and teamwork skills
- Flexibility to work evenings, weekends, and holidays as required
SUPERVISION:
The Expediter reports to the Executive Chef and Sous Chef.

The Expediter is to adhere to the policies and ethics of Thirty Nine Enterprises, LLC at all times and ask for assistance on any matters or answers to any questions not covered by this job description.

The Expediter provides services to assist with the monitoring of food preparation, plating and handling guidelines laid out by the Executive Chef. Responds promptly to needs of the restaurant. Meets commitments.

We also honor those tribes who have a historical relationship to this region, including the Comanche, Kiowa, Osage and Quapaw. Our National Story
Only a few tribal Nations were indigenous to what is now the State of Oklahoma. All others were removed from homelands across the contiguous U.S. to Indian Territory. In 1907 Oklahoma became the 46th state to enter the union. The state’s name comes from two Choctaw words “Okla” and “Homma” meaning Red People.

Capable of handling large pots and pans, stacks of plates, and dish racks, lifting, pushing, and pulling up to 50 pounds; may be subject to extended periods of walking, standing, sitting, reaching, balancing, bending, kneeling, handling, feeling, climbing, and twisting; and vision, speech, and hearing sufficient to perform the essential tasks.
